Pregnancy Cravings! The Best Chocolate Coconut Bar Recipe for an Easy, Healthy Treat

Craving sweets? It’s true, sometimes pregnancy can bring out the sweet tooth in us. But don’t go assaulting the ice cream and candy aisle just yet! Sure, everything in moderation, but when you’re having a loss of self control (give me treats!!), we love finding healthier alternatives. For example, craving ice cream? We love these Enlightened Bars in a variety of decadent flavors: Finally an ice cream alternative that isn’t chalky or watery—these are creamy and sweet and won’t leave you yearning for the real deal.

More of a chocolate candy gal? We tested out a handful of healthy bar recipes, many of which just couldn’t hold up to the deliciousness of the real thing (sometimes a brownie just needs to be a brownie). But alas, an impostor that made us go back for more! For a crunchy, sweet, salty, nutty treat, look no further than our Homemade Healthy Coconut Bars (a Mounds Bar really).

Homemade Healthy Coconut Bars

  • 2 cups shredded coconut

  • 1 cup coconut oil, melted

  • ¼ cup agave syrup or honey

  • 1 cup dark high quality chocolate

  • ¼ tsp vanilla extract

  • 1 pinch sea salt

Instructions

Mix together all the ingredients except the chocolate in a bowl. Press the mixture into a pan (we used an 8x8 baking pan) lined with parchment paper. Place in the freezer until the mixture is solid. Melt the chocolate on a double boiler and pour on top of the coconut base, sprinkle with sea salt if you like a salty sweet combo and freeze until the chocolate is solid. Cut into bars. Store in an airtight container in fridge or freezer to enjoy when you’re feeling like a sweet treat!
